A HACCP nemzetközileg elfogadott, szisztematikus módszer az élelmiszerek biztonságának megteremtésére a lehetséges kockázatok, veszélyek megállapítása, értékelése és kezelése révén.

A HACCP (Hazard Analysis Critical Control Point), azaz Veszélyelemzés, Kritikus Szabályozási Pontok. A HACCP rendszert a hatvanas években az amerikai űrkutatási program keretében fejlesztette ki a Pillsbury vállalat az űrkutatási Hivatallal (NASA) és a hadsereg Natick laboratóriumával közösen. Céljuk az volt, hogy az űrhajósokat szennyezés mentes, biztonságos élelmiszerekkel lássák el az űrutazás során, amit a hagyományos végtermék-ellenűrzési módszerekkel nem lehetett biztosítani. Az új szemléletű élelmiszer-biztonsági rendszer elveit 1971-ben hozták nyilvánosságra.
